Do you make slow roasted pulled pork often? We like to make it at our house because there are so many easy dinner meals we can create with it. We will make one or two roasts at a time.
The recipe for the pulled pork is super easy. We pat it dry with paper towels, wear gloves to spread liquid smoke all over it, and sprinkle a lot of SPG (salt, pepper, and garlic). Remember that the seasoning needs to reach the inside, so you need to add a lot of it. After that, we cover it with foil and put it in the oven at 250 degrees Fahrenheit. Leave it in there for about 8 hours or until the internal temperature reads 200 degrees. After we take it out of the oven, we shred it and let it cool down before we put it away.
We make our own SPG by mixing equal amounts of fine grain sea salt, course ground black pepper, and granulated garlic together and then pouring the mixtures back into the same containers.
Right after we cook the roast, we usually have Slow Roasted Pulled Pork BBQ Sandwiches as our first meal. You can make it as simple as adding the pulled pork to the bun and drizzling some bbq sauce on it. If you want you can also add chopped purple onion, and sweet or bread and butter pickles.
Another one of our favorites is pulled pork quesadillas. These are some of my favorites at our house. I like to use Oaxaca cheese for my quesadillas. I heat up the corn tortillas, fold the tortillas in half, put a piece of Oaxaca cheese inside along with some roasted hatch peppers and a huge spoonful of pulled pork. I put them on a preheated flat griddle on the gas stove and let the cheese melt and the tortilla crisp up.
Another simple idea is making pulled pork tacos. Warm up some corn tortillas, add some pulled pork and some chopped onion. You can also add some avocado slices, cilantro, salsa, or queso fresco.
We have made tortas with our pulled pork. Tortas are a Mexican sandwich. We buy "pan bolillo" which is a Mexican short baguette or french bread. We cut the bread lenghwise down the middle and toast it on our flat griddle. After that to make the sandwich, we spread refried beans on the bottom half and mayo on the inside of the top half. Put a generous amount of pulled pork over the beans, muenster cheese slices, avocado slices or mashed avocado, onion slices and some pickled jalapeno slices. These sandwiches are wonderful!
One meal idea that the kids can make on their own is Nachos! Have them take out a large cookie sheet, line it with tortilla chips, spoon warm pork over the chips and then cover the pork with grated cheese. Place the tray on the medium rack and broil it for 3 minutes. To make it healthier, add some diced onion, diced tomatoes, olives, black beans, and after they bake, top it with avocado or guacamole. This is a kids favorite recipe and they are proud of themselves when they help put dinner together.
Finally, we have also made Frito Pie with our pulled pork. We don't do this very often since it's so unhealthy for us, but gosh it's good! Put some Fritos in your bowl, spoon some pulled pork over them, spoon ranch style beans over the pulled pork, drizzle some bbq sauce, add some chopped onion, sweet pickles, shredded cheese and some sour cream too if you'd like. Of course everyone loves the Frito Pie but this is a special treat that we don't have very often.
