Chicken is protein-rich food low in calories and rich in nutrients. It's the perfect protein for those trying to eat healthy, maintain a moderate weight and stay full for longer. It's so versatile and so easy to work with when it comes to easy dinners. Rotisserie chicken makes it even easier. You can either shred it yourself or save yourself some time and buy it already shredded.
Let's start with an easy, quick, and healthy dinner recipe. For this recipe, there are several different jars of curry sauces to choose from. Tikka Masala, Butter Chicken, Thai Coconut and Korma sauce. Our favorite is Korma sauce but we can't always find it in the stores. In a large skillet or pan over medium heat, add oil and saute thinly sliced onions. Chop rotisserie chicken and add it to the onion. Mix throughly and add curry sauce. Saute for 2 minutes or until the chicken is well coated in all the curry. Bring to a boil on medium-high heat. The chicken is already cooked, so there's no need to boil for very long. You can serve the curry chicken with white rice or a piece of Naan bread. This makes a great dinner recipe or it can be made put into dishes for lunches.
We have also made an Avocado Chicken Salad. This salad makes a great lunch for the work week as well.
I use the rotisserie chicken a lot to make Flautas as well. They are so easy to make and my family loves them! The trick to make these healthier is to air fry them.
Pastel Azteca...Green Chile Chicken Casserole might be a bit more work to make because the green salsa needs to be made, but it make a great dinner, it feeds a lot of people and you can make it ahead of time and freeze it.
You can make the same Pastel Azteca with red enchilada sauce. I make enchilada sauce and freeze it, this way I always have some available for when I want to make recipes like this one.
